  • 1/2 lb smoked sausage (sliced)

  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1/4 cup chicken broth (or water)
  • 2 tablespoons butter

Instructions

  1. Cook the Sausage: In a large skillet or Dutch oven, heat olive oil over medium heat. Add the smoked sausage and cook until browned, about 5–6 minutes. Remove and set aside.
  2. Sauté Vegetables: In the same skillet, add bell pepper, onion, and garlic, cooking for 3–4 minutes until softened.
  3. Add Potatoes and Seasonings: Stir in the potatoes, Cajun seasoning, paprika, salt, and pepper. Return the sausage to the pan and mix well.
  4. Cook the Potatoes: Pour in chicken broth, reduce heat to medium-low, and cover. Let the mixture cook for 20–25 minutes, stirring occasionally, until the potatoes are tender and creamy.
  5. Finish and Garnish: Uncover, stir in the butter, and cook uncovered for another 5 minutes. Garnish with chopped parsley or green onions and serve hot.
