- 2 lbs red potatoes (washed and cubed)
- 1 tablespoon olive oil
- 1/2 lb smoked sausage (sliced)
- 1 green bell pepper (chopped)
- 1 small onion (chopped)
- 3 cloves garlic (minced)
- 1 teaspoon Cajun seasoning
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- 1/4 cup chicken broth (or water)
- 2 tablespoons butter
- Chopped parsley or green onions (for garnish)
Instructions
- Cook the Sausage: In a large skillet or Dutch oven, heat olive oil over medium heat. Add the smoked sausage and cook until browned, about 5–6 minutes. Remove and set aside.
- Sauté Vegetables: In the same skillet, add bell pepper, onion, and garlic, cooking for 3–4 minutes until softened.
- Add Potatoes and Seasonings: Stir in the potatoes, Cajun seasoning, paprika, salt, and pepper. Return the sausage to the pan and mix well.
- Cook the Potatoes: Pour in chicken broth, reduce heat to medium-low, and cover. Let the mixture cook for 20–25 minutes, stirring occasionally, until the potatoes are tender and creamy.
- Finish and Garnish: Uncover, stir in the butter, and cook uncovered for another 5 minutes. Garnish with chopped parsley or green onions and serve hot.
Notes
- For a spicier version, add extra Cajun seasoning or a dash of hot sauce.
- You can use andouille sausage for more smoky heat.
