Ingredients
Scale
Banana Peanut Butter Bites:
- 2 ripe bananas sliced into 1/4-inch rounds
- 1/3 cup natural peanut butter
Chocolate Coating:
- 1 cup dark chocolate chips or semi-sweet chocolate chips
- 1 tablespoon coconut oil
- Flaky sea salt for topping (optional)
Instructions
- Prepare the Banana Bites: Line a baking sheet with parchment paper. Spread a small amount of peanut butter onto half of the banana slices, then top with the remaining slices to create banana ‘sandwiches.’
- Freeze the Bites: Place them on the baking sheet and freeze for 30–60 minutes until firm.
- Make the Chocolate Coating: In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until fully melted and smooth.
- Coat the Bites: Dip each frozen banana bite into the melted chocolate, coating halfway or fully, then return to the parchment-lined tray.
- Set and Serve: Sprinkle with sea salt if desired. Freeze for another 15–20 minutes until set. Store in the freezer in an airtight container for up to 1 week.
Notes
- Use almond butter or sunflower seed butter for a nut-free or alternative option.
- These make a great post-workout snack or healthy dessert for kids and adults alike.
