Description

  • 1 1/4 cups all-purpose flour
  • 1 1/2 teaspoons baking powder

  • 1/2 cup unsalted butter (softened)
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup whole milk

For the espresso soak:

  • 1/2 cup brewed espresso or strong coffee (cooled)
  • 1 tablespoon coffee liqueur (optional)
  • For the mascarpone frosting:

    • 8 ounces mascarpone cheese (room temperature)
    • 1/2 cup heavy cream (cold)
    • 1/2 cup powdered sugar
    • 1/2 teaspoon vanilla extract
    • cocoa powder (for dusting)

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners.
  2. Prepare the cupcakes: Whisk together flour, baking powder, and salt. Cream butter and sugar, add eggs and vanilla. Mix in dry ingredients and milk. Fill cupcake liners and bake for 18-20 minutes.
  3. Soak the cupcakes: Poke holes in cooled cupcakes and brush with espresso mixture.
  4. Make the frosting: Beat mascarpone with vanilla and sugar. Whip cream separately and fold into mascarpone. Frost the cupcakes and dust with cocoa powder.

  • For a non-alcoholic version, skip the coffee liqueur.
