Tofu

Sweet Potato

- 1/2 tablespoon olive oil

Instructions
- Preheat Oven & Prepare Tofu: Preheat your oven to 425°F (218°C) and line a large baking sheet with parchment paper. Using the large side of a box grater, shred the block of tofu, ensuring any larger chunks are pushed through the grater to get a consistent shredded texture. Spread the tofu evenly on the prepared sheet.
- Season and Bake Tofu: Drizzle the shredded tofu with olive oil, sprinkle the fine sea salt and taco seasoning over it. Toss thoroughly to coat every piece evenly. Spread the tofu out in a thin, even layer on the baking sheet. Bake for 30-35 minutes, checking at 25 minutes to prevent burning, until crispy around the edges. Remove from oven and allow to cool slightly before breaking apart any large chunks into shreds.
- Prepare and Roast Sweet Potato: Toss the bite-sized sweet potato pieces with olive oil, taco seasoning, salt, and pepper. Spread them evenly on a separate baking sheet. Roast in the oven alongside the tofu for about 25 minutes, tossing halfway through, until the sweet potatoes are tender and golden brown.
- Assemble the Bowls: Once both tofu and sweet potatoes are cooked, divide them evenly between two bowls. Add a generous scoop of cottage cheese, sliced or diced avocado, and drizzle with hot honey. Finally, sprinkle chopped fresh cilantro on top for added freshness and aroma.
