  • 1 teaspoon dried basil or 1/4 cup fresh basil, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Fresh basil leaves for garnish (optional)

Instructions

  1. Heat the olive oil: In a large pot over medium heat, sauté the onion until translucent.
  2. Add aromatics: Stir in garlic and cook for 30 seconds.
  3. Cook the base: Add tomatoes, tomato paste, chicken broth, sugar, basil, salt, pepper, and red pepper flakes. Simmer for 15–20 minutes.
  4. Blend: Use an immersion blender or transfer to a blender to puree the soup until smooth.
  5. Finish the soup: Stir in cream and Parmesan. Simmer for 5 more minutes.
