Description

This TWIX Ice Cream Cake is a decadent no-bake dessert that combines crunchy shortbread cookie crust, creamy vanilla ice cream mixed with chopped TWIX bars, and a luscious drizzle of melted milk chocolate and caramel topping. Perfect for chocolate and caramel lovers, this frozen treat is easy to prepare and ideal for any celebration or warm day dessert craving.

Ingredients

Scale

Crust

  • 16 shortbread cookies (Keebler brand recommended)
  • 1/4 cup salted butter, melted

Filling

  • 5 cups vanilla ice cream, softened
  • 3 standard size TWIX candy bars, chopped and divided

Topping

  • 1/2 cup milk chocolate chips
  • 1/2 cup caramel topping

Instructions

  1. Prepare the Pan: Grease an 8×8-inch or 9×9-inch baking dish with non-stick spray and set aside to prevent sticking.
  2. Make the Crust: Place the shortbread cookies in a large Ziplock bag, seal it, and crush the cookies into small crumbs using a rolling pin. Pour the crumbs into the prepared pan, add melted butter over them, and mix well to combine. Press the mixture evenly into the pan and freeze for 20 minutes to set the crust.
  3. Prepare the Ice Cream Layer: While the crust chills, mix the softened vanilla ice cream with half of the chopped TWIX bars. Spread this mixture evenly over the frozen crust in the pan. Then sprinkle the remaining chopped TWIX bars evenly over the ice cream layer to add texture and flavor.
  4. Freeze the Cake: Cover the baking dish with a lid or plastic wrap and freeze the cake for at least 6 hours or overnight to ensure it is fully set and firm.
  5. Add the Toppings and Serve: When ready to serve, place the milk chocolate chips in a microwave-safe bowl and melt them in 20 second increments, stirring between each, until smooth. Drizzle the melted chocolate evenly over the top of the frozen ice cream cake, followed by drizzling the caramel topping. Slice into squares and serve immediately for a refreshing and indulgent dessert.

Notes

  • Use softened ice cream to make spreading easier and more even.
  • Press the cookie crust firmly to ensure it holds together well.
  • For best results, allow the cake to freeze overnight.
  • If desired, substitute shortbread cookies with graham crackers for a different flavor.
  • Microwave the chocolate chips carefully in short intervals to prevent burning.
