- Prepare Zucchini: Grate the zucchinis and sprinkle them evenly with salt. Let them sit for 10 minutes to draw out excess water.
- Drain Moisture: Squeeze and drain the grated zucchinis thoroughly to remove as much moisture as possible to ensure crisp fritters.
- Mix Ingredients: In a large bowl, combine the drained zucchini, flour, eggs, grated Parmesan cheese, chopped parsley, black pepper, and garlic powder. Mix well until fully incorporated.
- Heat Oil: Pour vegetable oil into a skillet and heat it over medium heat until shimmering and hot enough for frying.
