Description

This comforting White Chicken Chili is a creamy, flavorful stew made with tender chicken, white beans, and green chiles, slow-cooked with aromatic spices for a hearty meal. Perfect for a cozy dinner, it combines wholesome ingredients and a touch of creaminess, garnished with fresh cilantro and lime for brightness.

Ingredients

Scale

Chicken and Broth

  • 1 lb (450 g) boneless, skinless chicken breast or thighs
  • 4 cups chicken broth

Beans and Vegetables

  • 2 cans (14 oz each) white beans, drained and rinsed
  • 1 can (4 oz) diced green chiles
  • 1 medium onion, chopped
  • 2 cloves garlic, minced

Spices

  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • ½ teaspoon oregano
  • Salt and pepper to taste

Optional

  • ½ cup coconut cream or sour cream
  • Fresh cilantro and lime wedges for garnish

Instructions

  1. Combine ingredients in crockpot: Place the chicken, chicken broth, white beans, diced green chiles, chopped onion, minced garlic, cumin, chili powder, oregano, salt, and pepper into the crockpot. Stir gently to combine the ingredients.
  2. Cook slowly: Cover the crockpot and cook on low heat for 6 to 7 hours, or alternatively on high heat for 3 to 4 hours, allowing the flavors to meld and the chicken to become tender.
  3. Shred chicken: Carefully remove the chicken from the crockpot. Using two forks, shred the chicken into bite-sized pieces, then return the shredded chicken back into the crockpot.
  4. Add cream and warm through: Stir in the coconut cream or sour cream if using. Cover and cook on low for an additional 15 minutes to heat through and enrich the chili.
  5. Serve and garnish: Ladle the chili into bowls and garnish with fresh cilantro leaves and lime wedges. Optionally, serve with tortilla chips for added texture and flavor.

Notes

  • You can use either chicken breast or thighs depending on your preference; thighs will be more tender and juicy.
  • Coconut cream adds a subtle sweetness and creaminess, but sour cream works well as a dairy alternative.
  • Adjust the chili powder and green chiles depending on your preferred spice level.
  • For a thicker chili, you can mash some beans before adding them to the crockpot.
  • This dish freezes well; store in an airtight container for up to 3 months.
