  • 2 cans (15 ounces each) great northern beans, drained and rinsed
  • 1 can (15 ounces) corn, drained
  • 2 cans (4 ounces each) diced green chiles
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 4 cups low-sodium chicken broth
  • 8 ounces cream cheese, softened and cut into cubes
  • ½ cup shredded Monterey Jack cheese
  • ¼ cup chopped fresh cilantro, optional
  • Lime wedges for serving

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the onion and cook for 3 minutes until softened.
  2. Stir in the garlic and cook for 30 seconds until fragrant.
  3. Add the chicken pieces and cook for 5 to 6 minutes, stirring occasionally, until lightly browned.
  4. Stir in the beans, corn, green chiles, cumin, chili powder, smoked paprika, salt, and pepper.
  5. Pour in the chicken broth, bring to a boil, then reduce heat to low.
  6. Cover and simmer for 15 minutes, or until the chicken is cooked through.
  7. Stir in the cream cheese until fully melted, then add Monterey Jack cheese, stirring until creamy.
  8. Taste and adjust seasoning as needed.
  9. Serve hot, garnished with cilantro and lime wedges if desired.
