Cheesecake Filling:
- 16 oz cream cheese, softened
- ¾ cup granulated sugar
- 2 large eggs
- 2 tablespoons all-purpose flour
- ¼ cup sour cream
- â…“ cup freshly squeezed lemon juice
- 1 tablespoon lemon zest
- 1 teaspoon vanilla extract
- Powdered sugar, for dusting (optional)
Instructions
- Prepare the Crust: Preheat oven to 325°F (160°C). Line an 8×8-inch pan with parchment paper. Mix graham cracker crumbs, ¼ cup sugar, and melted butter. Press into pan and bake for 10 minutes.
- Make the Filling: Beat cream cheese until smooth. Add ¾ cup sugar, eggs, flour, sour cream, lemon juice, zest, and vanilla. Pour over crust.
- Bake: Bake for 30–35 minutes until set. Cool, then chill for 3 hours or overnight.
- Serve: Cut into squares and dust with powdered sugar if desired.
