Description

Zucchini Mixture

  • 2 medium zucchinis (about 2 cups grated)

  • 1 large egg
  • 1/4 teaspoon garlic powder

For Frying

  • 2 tablespoons olive oil

Instructions

  1. Prepare the zucchini: Grate the zucchinis and place them in a colander. Sprinkle with salt and let sit for 10 minutes to draw out excess moisture, then squeeze out as much liquid as possible using a clean kitchen towel or cheesecloth.
  2. Make the batter: In a large bowl, combine the drained zucchini, chopped onion, grated Parmesan cheese, flour, breadcrumbs, egg, garlic powder, and black pepper. Mix thoroughly until a well-combined batter forms.
  3. Heat the oil: Warm 2 tablespoons of olive oil in a large nonstick skillet over medium heat to prepare for frying the patties.
  4. Form and cook patties: Scoop about 2 tablespoons of the zucchini mixture for each patty and flatten it slightly. Place the patties carefully into the hot skillet and cook for 3 to 4 minutes on each side, or until golden brown and crispy.
  5. Drain and serve: Remove the cooked patties from the skillet and place them on a paper towel-lined plate to absorb any excess oil. Serve the patties warm.

Notes

  • For a gluten-free version, substitute all-purpose flour and breadcrumbs with almond flour.
  • Add chopped fresh herbs such as dill or parsley to the batter for extra flavor.
